Complimentary Meals Menu

What getaways and vacations do for my emotional well-being is often counteracted by
my putting on weight during my stay.

We thus offer tastily prepared home-cooked meals that will delight your palette without
the worry of weight-gain. All produce and meats are also organic and/or locally grown.

Here are some samples of the evening meals you can expect:

Cranberry Roast Beef- The flavor mix of whole cranberries, onion and fork-tender pot  roast always makes a hit, even with
those (like me) who don't think they LIKE cranberries. Potatoes smashed with reduced-fat cream cheese adds to the comfort of this meal.

Hoisin Chicken - Succulent white breast of chicken simmered in hoisin sauce is complimented by white-cheddar polenta and broccoli
or wild rice and baby carrots.

Stuffed Shells-Three jumbo pasta  shells stuffed with a delicious mixture of spinach, low-fat ricotta, mozzarella and parmesan cheese,
 topped with luscious marinara sauce.

Hunter's Chicken-A chicken quarter is seared and simmered in white wine, white white vinegar, rosemary and a hint of garlic,
just like Italian hunters cooked their venison. White cheddar polenta and a choice of organic asparagus or corn finish this incredibly delicious meal.

Beef Burgundy- Beef tenderloin is joined by white potatoes, carrots, onions, mushrooms, a bit of bacon and splashes of full-bodied
red wine to dazzle the palette. Served with Bavarian sourdough bread.

Smoked Salmon Tortellini - Light white cheese sauce covers a medley of three-cheese tortellini and chunks of smoked salmon.

Cornish Hen- An oven-baked Cornish hen half is complimented by sweet potatoes whipped with reduced-fat cream cheese or corn
bread stuffing, and green beans.

Stuffed Meatloaf- Between two layers of choice ground beef is a moist mushroom bread stuffing. Served with reduced-fat cream
cheese-mashed potatoes and corn.

White Bean Chili- Chunks of chicken breasts, navy beans and whole-kernel corn,  in a light chicken broth combine to make this a
much-loved alternative to the red-meat variety. Served with buttermilk biscuits or corn muffins.

Talapia- Poached in pear chapotle and white wine, this delicate  white fish is then served atop a mixture of sun-dried tomato couscous
and LOTS of stir-fried cabbage.

Chicken Curry- Choice of two white or dark chicken pieces simmered in a mild curry sauce, with apples and onions. Served over a
cup of Basmati rice, with a side of cauliflower.

Shrimp Pad Thai- Rice noodles seasoned with peanut sauce, lemon grass, and tamarind and tossed with shrimp, bean sprouts and
stir fry vegetables.

Tamale Pie- Two corn meal muffins form the bed for a blanket of a ground beef and kidney bean and cheddar cheese sauce. I like either
corn or carrots with this great dish.
